The favorite dish of Charles III of England is a preparation of Italian origin, a mushroom risotto with lamb. Chef McGrady told how he prepared this dish that, with the approaching fall, can become a perfect recipe for you to cook at home… and feel like a king (or queen)!

The favorite recipe of King Charles III of England

Mushroom and lamb risotto

for 4 people


  • 240 grams of arborio or carnaroli rice (special for risotto)
  • 200 grams of lamb meat (boneless)
  • 200 grams of mushrooms
  • 800 milliliters of chicken broth
  • 200 milliliters of white wine
  • 25 grams of butter
  • 50 grams of grated Parmesan cheese
  • Olive oil
  • truffle oil
  • Basil
  • 1 tomato
  • Salt
  • Pepper

Step by Step

  1. prepare the lamb

    Season the meat with salt and pepper and brown it in a frying pan with a few drops of oil, just so that it takes on color and seals, keeping all its juices and flavor inside. Remove and reserve.

  2. Prepare the vegetables

    Clean the tomato, remove the stem and the seeds and chop it. Remove the earthy foot from the mushrooms and wash them quickly under cold running water, without letting them soak. Chop or slice them.

  3. fry the rice

    Put a couple of tablespoons of olive oil in the same pan where you browned the meat and add the mushrooms and tomato. After two minutes, add the rice and stir so that it is impregnated with the flavors.

  4. heat the broth

    Pour the broth into a saucepan and put it on the fire, so that it is very hot when you have to add it to the rice.

  5. Start pouring the liquids

    Water the rice with the wine and stir a little. Wait a few minutes for the alcohol to evaporate and pour a ladle of hot chicken broth.

  6. cook the rice

    Cook the rice for approximately 16 minutes, stirring constantly and adding more broth, ladle by ladle, as the rice absorbs it.

  7. butter the risotto

    Remove the pan from the heat and season the risotto with salt and pepper. Add the butter and Parmesan cheese, stirring with a wooden spatula until they have melted (this process is called buttering). Serve immediately, piping hot, decorated with a few fresh basil leaves and a few drops of truffle oil.

The cep (boletus edulis) is one of the most aromatic, just like the trumpet of death or the chanterelles. Put them between 10 and 20 minutes in a bowl with water to rehydrate and then you can use them in your recipe.
